+Does Bookify see all my Google events?

Only the busy/free time slices, not event titles or attendees. We need that to detect conflicts. You can revoke access any time from Google's security page.

+Can I sync more than one Google calendar?

Yes. Connect each Google account separately. All connected calendars feed availability detection; you pick one to receive new bookings.

+What happens to my bookings if I disconnect?

Existing bookings stay on your Google Calendar. New Bookify bookings just stop syncing until you reconnect.
